Today for breakfast: Flax Meal and Blueberry Pancakes

I somehow got the idea of blueberry pancakes and bacon in my head earlier this week, and decided to make a semi-healthy version of it for Saturday breakfast.  I decided to find a recipe that incorporated flax meal into the pancakes, and found this very promising one

Flax meal is really good for you…no carbohydrates*, high in fiber, full of omega-3 fatty acids.  It also makes you poop, there is just no two ways about it.  Don’t make a big batch of these pancakes pre-first date is all I’m saying.

I modified the recipe a bit by adding the blueberries, and forgoing the vanilla protein powder for soy flour and some scraped vanilla bean instead.  These pancakes use yogurt, which is of course very good for you, although milk might make them a bit fluffier.  I got some sugar-free “maple flavored” syrup that is probably growing tails on my unborn children as we speak, and warned D, my chocolate croissant loving boyfriend, that these were “healthy pancakes.”  

They actually turned out quite well and definitely sated my need for blueberry pancakes.  D generally has no problem telling me if something sucks, and not only did he like them, he went for seconds.  I think next time I might try making a tropical version, with bananas or mango, macadamia nuts, and perhaps a little coconut milk for the liquid.  I think this recipe would also convert well to a vegan version, again incorporating coconut milk as well as soy milk.  I have a number of vegan friends, and as someone who loves to cook I enjoy the challenge of converting recipes to accommodate more restrictive diets (i.e. vegan, low carb) that are delicious to even the naysayers (just ask Laura of Rocket Dog Rescue about the chocolate vegan cupcake episode).
